1 side or fillet of salmon

1 package Puff Pastry

1 Tbsp. Garlic Butter
1/2 cup Mayonaise or Miracle Whip
1 tbsp. wet Mustard

melted butter to brush pastry

Cooked and cooled and dried spinach - Optional - I don't use it on mine

Directions:
Directions:
Remove the skin and dry the piece of salmon.

Roll out the Puff Pastry, must be rolled the length
and width of the fillet, so you can cover up the whole
salmon with the pastry

Make the mixture of garlic, mayo and mustard.
Spread all over the salmon.

Lay a layer of cooked spinach on the pastry first - I don't use the spinach on mine

Fold up the sides of the pastry and brush melted butter all over the pastry crust.
If you have extra pastry, make nice shapes to put on top of salmon.

Bake in 350 oven for 30 minutes or until crust is golden.

Remove carefully to long platter and decorate with lemon curls and parsley.
