1/2 C shortening
1 C sugar
2 eggs
2 tbs thick cream
1 tsp vanilla
1/4 tsp soda
1/2 tsp salt
2 1/2 C flour

PINEAPPLE FILLING
1 C sugar
1/4C flour
1 1/2 C drained pineapple
1/4 C lemon juice
3 tbs butter
1/4 tsp nutmeg
3/4 C pineapple juice

Directions:
Cream sugar and shortening, add cream, vanilla, salt and soda. Mix well and add flour. mix well on lightly floured board. Cut in rounds or suitable shape. Place 1 cookie on lightly greased sheet. Place rounded
teaspoonful of filling on each cookie. Place another cookie on top and press down edges. Bake until delicately brown at 400 for 8 - 10 minutes.

Filling
Mix sugar and flour in saucepan. Stir in the rest of ingredients. Cook slowly, stirring constantly, until thickened 5 - 10 minutes. Cool

Yield 3 dozen
