2 lbs. summer squash, chopped
1 medium onion, chopped
2 eggs
1 c. mayonnaise
1 c. grated Parmesan cheese
Salt and pepper

Directions:
Directions:
Preheat oven to 350 º. On stove top, steam or boil squash and onion until just tender.
Beat eggs and mayonnaise, add Parmesan cheese. Fold in squash and onion.
Pour into greased 1 1/2 quart baking dish and bake for 30 minutes.
Serve warm.
