3 - 15 oz. cans of cannellini beans, drained
1/2 c chopped red onion
1/2 c chopped fresh parsley leaves
1/4 c chopped or torn fresh dill, mint, or basil
1/2 t coarse salt
1/4 t freshly ground black pepper
1 recipe Rose's vinaigrette
3 scallions (green part only), finely sliced

Directions:
Directions:
Combine the beans in a large bowl with the red onion, parsley, optional herb of choice, salt and pepper. Slowly stir in the dressing to taste. Garnish with the scallions. Serve immediately or refrigerate. Keeps in the fridge for up to 3 days.
