1 pound frozen cheese tortellini (I often used tri-color or spinach/cheese, but never meat)
11 oz box frozen butternuts squash puree, thawed
1/2 cup milk
2 tablespoons butter
1 tablespoon grated Parmesan cheese (or more, to taste - I usually used more)
Salt & pepper to taste
1/4 cup chopped parsley (fresh)

Directions:
Directions:
Cook the tortellini according to the package directions. Meanwhile, combine the squash, butter, cheese, salt and pepper in saucepan. Cook over low heat until the butter has melted and the squashi is just heated through. If it gets too th ick, add milk.

Drain the tortellini and combine with the squash mixture; sprinkle with parsley and/or extra cheese; serve

This is a family favorite - super fast and easy to make and everyone loves it. It's a great way to get veggies into the kids and/or have a meat-free meal. Re-reading the actual recipe to type it in here, I realize we would add significantly more Parmesan cheese - like close to a 1/4 cup, but add as much or as little as you like. This is a fast dinner for a rushed weeknight. It can be used as a side dish as well.
