Meatballs;
1 Lb.Veal*
1 Lb Beef
3 cloves garlic minced
a handful of parsley flakes
3 Tsp salt
3 Tsp white pepper
1/4 cup fresh grated parmesan
1 c. breadcrumbs.
2 eggs lightly beaten
1/4-1/2 cup flour
1/2 cup oil for frying
1/2 cup red wine
1/2 cup beef stock

preheat oven to 175º
place parchment on 1-2 baking sheets.
Mix the veal* and beef gently together in a large bowl.
Add the garlic, parsley, salt, pepper, parmesan, breadcrumbs, eggs, and cheese to the mix and mix until well incorporated.
Roll the mixture into golfball size balls and place on the parchment-lined baking sheets.
Place flour on a plate and gently roll meatballs in the flour until covered and shake off excess and place back on the parchment-lined baking sheets. place in refrigerator for 30 minutes.
In a large skillet heat half the oil up and in batches the meatballs and cook turning frequently, remove and place back on cookie sheets and place in the oven, add more oil if needed.do this until all the meatballs are done and being warmed in the oven.
Dump the oil except 2 T. reduce heat and Add the red wine scraping the bottom of the pan with a wooden spoon releasing the fond bits from the pan, add the broth and simmer until sauce reduces and thickens
Place the meatballs on a serving platter and pour the sauce over the meatballs and serve as a main course with your pasta.

When I started reading recipes I noticed the Italians used a lot of veal in their recipes.I stuck with my basic recipe replacing the Pork with veal which has a different texture and taste.
My first batches were bland so I adjusted the seasoning and cooked small batches to taste.
Again did I say I love meatballs?
