• 1 cup unsweetened cocoa powder
• 2 cups white sugar
• ½ cup vegetable oil
• 4 eggs, at room temperature
• 3 tsp vanilla extract
• 2 cups all purpose flour
• 2 tsp baking powder
• 1 tsp kosher salt
• ½ cup powdered sugar (for dusting before baking)
• Parchment paper for baking

1. In a stand mixer, combine cocoa powder, white sugar, and vegetable oil. Mix for 2 minutes. Add eggs and vanilla extract and mix again until evenly combined. Add flour, baking powder and salt and mix again to fully incorporate all the ingredients. Cover and refrigerate for at least 3 hours.
2. Preheat oven to 350°. Line a baking sheet with parchment paper. Measure out small balls of dough, roughly size of ping-pong ball. Roll dough balls with oiled hands until tightly packed and round. Then roll each ball through powdered/confectioner’s sugar until fully covered. Place onto cookie sheet covered with parchment paper, separated by 2 inches or so.
3. Bake for 10 minutes… cookies should flatten and “crinkle”, cracking across sugared top. Don’t overcook – cookies should still be very soft, not crunchy, when taken out of oven.
4. Let cookies cool slightly before transferring cookies to a cooling rack to finish cooling.

We discovered these amazing cookies at a small bakery in Maui and became addicted! We came home determined to learn how to make them, and after experimenting with various online recipes, this is the one that created the perfect version. Super easy to make, and always gets an amazing reaction from everyone that tries one. Think of them as the perfect combination of a brownie and a cookie.

This recipe takes only around 15 minutes to actually make, but the combined ingredients need to sit and refrigerate for at least 3 hours before baking for best results, so some advanced planning is needed. We try to refrigerate it overnight when when we have the time.
