Ingredients:  
14 cups firm bread, cut into small cubes;white, whole wheat, or mixture.
1 cup water, chicken stock, or milk, extra if meeded
½ - ¾ cups butter
1 lge onion, diced (about 2 cups)
3 lge stalks celery, diced (about 2 cups)
¼ cup minced celery leaves
1/3 cup minced parlsey
2 tsp poultry seasoning (Bell’s)
Salt & pepper
2 eggs, lightly beaten

Directions:
Directions:
Place bread in big bowl and pour on 1 cup liquid, toss gently. Set aside. In wide skillet melt butter. Add onion until limp. Add celery & cook 10 minutes, until limp. Stir in other 3 ingredients. Pour mixture over bread. Season & toss gently. Stuffing should be drier than finished product, but not much. Add a little more liquid if necessary. Stir in eggs last after tasting. Can add 2 or 3 diced Cortland, or Northern Spy, apples if desired.
