Four - six sliced yellow squash
1/2 to 1 cup cornmeal
1 cup vegetable oil
Salt and pepper

Wash and slice squash and drain. Place in a bowl and add cornmeal, salt and pepper and shake to coat squash. Heal oil in a skillet and fry the squash pieces one layer at a time until browned.

This was a favorite at the Elsaifi household when Carrie was a little girl. I told the kids they were cookies, and they would literally stand in the kitchen waiting for me to hand them a "cookie" as they were done and cooled. It was my sneaky way to get them to love vegetables.
