One pound cut up chicken (or skinless chicken pieces)
1 package Oven Fried Chicken Crispy Crumbs
1 cup crumbled Special K or Total Cereal
1 cup bread crumbs
2 eggs
4 tbsp. water
4 tbsp. vegetable oil
Salt and pepper

Directions:
Directions:
Preheat oven to 325º. Place oil in a large baking or roasting pan. Mix Oven Fried crumbs, cereal, and bread crumbs. Beat eggs and add water, salt, and pepper. Wash and pat chicken dry. Dip chicken pieces in egg wash and coat with crumb mixture and place in pan. Cook in oven for 40 minutes. Turn chicken and cook for another 35 minutes until well browned. Remove chicken from pan and reserve drippings for gravy.
Gravy:
Heat drippings in large saucepan or skillet. Add 1-2 tbsp. flour to make a roux. Cook and stir for three minutes. Add milk 1/2 cup at a time stirring constantly until slightly thickened. Add salt and pepper and continue to boil and stir until desired consistency.

My daddy loved mother (Mary Lou Scott Mitchusson) for her fried chicken. Although I have tried to fry it like she did, it comes out raw or burned. This recipe is the closest I have come and is a favorite of all of the Elsaifi children.
