1 3/4 C flour
2 C sugar
3/4 C cocoa
2 tsp baking soda (do not adj for altitude)
1 tsp baking powder (do not adj for altitude)
1 tsp salt
2 eggs
1 C strong coffee
1 C sour milk (add 1 T white vinegar)
1/2 C oil
1 tsp vanilla

Frosting
2 sticks softened butter
1 8 oz package cream cheese, room temp.
2 1/2 C powdered sugar, adj. to taste

Mix all dry ingredients. Mix all liquids adding coffee first if it is hot so as not to cook the eggs. then add to dry mix. blend until smooth. Prepare rectangular pan with shortening and cocoa powder. Poor in batter. Bake at 350º for 35-40 minutes or until a tooth pick comes out clean. Let cool and frost.

Frosting

Blend with mixer butter, cream cheese and powder sugar. Adjust sugar to taste.

This is my favorite cake which my Grandma perfected and I always ask for on my birthday. For bakers the batter may seem too thin but go with it and it will be fluffy and moist.
