( ingredients for the stuffing)
2 lb. frozen spinach defrost and squeezed
2 large onion diced small
3/4 Cup walnuts diced
1/2 cup olive oil
1 tbs red pepper paste
3 tsp pomegranate molasses
1 1/2 tsp salt or to taste
1 tsp black peppers
( ingredients for the kibbeh shells )
2 cup fine cracked wheat bulgur.
1 1/2 cups farina small grain
1 cup flour
1/2 cup cornstarch
1 small onion minced
1 tsp dried coriander
2 tsp salt or to taste
1/2 tsp black pepper

and water to knead the kibbeh.
(ingredients for The topping Sauce before serving, if you are boiling the kibbeh)
1/2 cup of olive oil, 4 tsp minced garlic. 1/2 tsp chill . 2 tsp paprika.1 bunch fresh coriander diced fin. 1 squeezed lemon juice and 1/2 lemon zest. .

((( how to make the stuffing )))
To make the stuffing. In a sauce pan add the 1/2 cup olive oil and Toste the walnuts,
add the onion and cook it of 3 min then add salt, black peppers mix and add the
spinach cooked for 10 min for the liquids to evaporate, then add the pomegranate to
it mix and shut the stove off and sit a side to cool.
((( make the topping sauce )))
Use a medium skillet pour the olive oil and turn the stove on medium heat add the
garlic give it a light golden color shut the stove off add the chill, paprika, lemon juice
lemon zest and fresh coriander mix it and sit aside.
((( how to make the Kibbeh shells )))
to make the shell. In a large mixing Bowl add bulgur, farina mix then add the warm water to cover the mixture and sit aside for 30 minutes.
after add salt, coriander and black pepper
Brake it up with your hand, then add cup of flour,1/2 cup cornstarch,
minced onion. knead together with 1/2 cup water combined to have a good mix of kibbeh dough taste it for salt and rest it for 10 min.
know make the shape, Cut the dough to medium size ball flatten by your palm of your hand add tsp of the stuffing close it and shape it like a football use water too smooth it. place all the ball you made on try, in the fridge until you ready to cook. In a large pot pour water 1/2 way with 1,1/2 tbs salt bring the water to boil when it ready drop the kibbeh in for10 min or until cooked, you see it rising to the top. give it couple minutes then take the kibbeh out and place it in the serving plate then add the topping on the boiled kibbeh .
