12 cups dry bread pieces
2 cups chopped onions
3 cups chopped celery
1 ½ tablespoon poultry seasoning
¼ teaspoon pepper
4 eggs
1 cup melted butter
Water as needed

Directions:
Directions:

• Cut the bread into 1/2-inch cubes, knowing that they won’t be exactly uniform and air-dry overnight. Leave the crust on for a fuller flavor and more interesting texture.
• Grind Onions and celery in food processor or chop by hand.
• Combine the bread pieces and onion and celery mixture with remaining ingredients.
• Add enough water to keep the dressing moist but not so much that it’s soggy.
• Stuff and cook inside turkey, or in a covered baking dish.
