1 small onion chopped
2 cloves garlic minced
1 green pepper chopped
3 tomatoes chopped
1 tsp. salt
½ tsp. fresh ground pepper
2 tbsp. olive oil
¼ cup wine vinegar
½ cup water
1 cucumber peeled and sliced. (optional)

Directions:
Directions:
Combine onions, garlic, green pepper, salt, tomatoes, pepper and puree in blender. Gradually stir in oil, vinegar and water. Chill in a bowl (non-metal) for 2 hours. Add cucumber just before serving.
