2 T Olive Oil
1lb of boneless, skinless Chicken Breast cut into pieces
1 medium Onion chopped
1 C.thinly sliced Carrots
1 C. thinly sliced Celery
1 pkg of frozen Peas, or you can substitute frozen Mixed Vegetables.
1 can of Cream of Chicken diluted with 1 can of water.
Bisquick Mix used to make biscuits on top. Follow biscuit recipe on box.

Preheat oven to 400º
In a 12" skillet heat oil.
Add Chicken and cook until almost done about 5 minutes.
Stir in Onion, Carrots and Celery.
Cook, stirring occasionally until Onion is translucent, about 3 minutes.
Stir in Cream of Chicken, and Peas ( mixed vegetables) stirring continuously, bring mixture to a low boil over medium heat. Cook 1 minute more.
Pour into a lightly greased 2 qt casserole dish.
Mix Bisquick biscuits per directions and arrange on top of chicken mixture. Try to get edges touching.
Bake 10 to 12 minutes or until biscuits are golden brown.
