Crust
1 1/2 graham cracker crumbs
1/4 c sugar
3/4 stick butter, melted

Cheesecake
2 1/2 lbs cream cheese, at room temperature
1 1/2 c sugar
5 whole eggs, at room temperature
2 egg yolks, at room temperature
1/4 c sour cream or heavy cream
zest of 2 lemons (may leave out if desired)
1 1/2 t vanilla

Preheat oven to 350. Make crust by combining graham cracker crumbs, sugar and melted butter. Press into springform pan with your hands, pressing into the bottom and up about 1 inch on the sides. Bake for 8 minutes and then cool. Raise oven temperature to 450, then make filling. Mix cream cheese and sugar in mixer until light and fluffy, about 5 minutes. Reduce speed of mixer and add eggs and egg yolks, two at a time, mixing well. Add sour cream, lemon zest and vanilla. Mix thoroughly and pour into cooled crust. Bake in bain-marie for best results. Bake for 15 minutes, turn oven temperature down to 225 and bake for another 1 1/4 hours or until just set in the center. Cool thoroughly, then chill.
