1 C flour
2/3 C finely chopped almonds
1/2 C sugar
1/2 C cold butter (no substitutes)
1/2 C seedless raspberry jam

Frosting
1 square (1 oz) unsweetened chocolate, melted and cooled
1/3 C confectioner's sugar
2 TBS butter
silvered almonds

Directions:
Directions:
In a bowl, combine flour, chopped almonds and sugar. Cut in butter until mixture resembles coarse crumbs. Form into a ball. Cover and refrigerate for 1 hour. On a floured surface, roll the dough to 1/8 " thickness. Cut with a 2" round cutter and place 1" apart on greased baking sheet. Bake at 375 for 7 - 10 minutes or until the edges are lightly browned. Cool. Spread 1/2 tsp jam on half of the cookies; top with another cookie.

Frosting
combine chocolate, confectioners' sugar and butter, Spread the tops of cookies. Decorate with slivered almonds.

Makes: 20 sandwich cookies
