1 1/2 sticks butter
3 large eggs
1 cup sugar
grated rind of 1 lemon or orange
1 1/4 cups cake flour

Directions:
Directions:
Preheat oven to 350 and prepare pan. Can use small loaf pan, or 8 inch round. This makes a small cake. Also, set the butter out before hand, it needs to be the consistency of firm mayonnaise. Blend the eggs and sugar with the lemon or orange peel for a minute at low speed to mix, then increase speed to high and beat for 4 to 5 minutes or more, until mixture is pale, fluffy, doubled in volume, and looks like whipped cream. Turn speed on egg mixture to low and gradually sprinkle in the flour as you mix. Do this rapidly, not more than 15 to 20 seconds. Still at low speed, and using a spatula, dump the soft butter into the batter, mixing 15 to 20 seconds. Don't make it perfect. Fold the batter until completely mixed. Place in pan and bake about 35 to 45 minutes. Cool for 10 minutes and then remove from pan.
