1/2 c. Hot mashed potatoes (unseasoned)

3 c. Powder sugar

1 c. Shredded Sweetened Coconut

1 tsp vanilla

3 oz. Semisweet Chocolate

3 T. butter

Whole almonds (optional)

Directions:
Directions:

Mix together hot mashed potato, sugar,and coconut.

Add vanilla.

Press into lightly buttered 8" square pan and set aside.

(Optional) place almonds on mashed potato mixture approx. every 2 inches.

Melt chocolate and butter together stirring constantly.

Pour over potato mixture.

Refrigerate until set and cut into squares.

Store in refrigerator in air tight containers.
