1/4 c. unseasoned mashed potatoes

2 T. milk

1tsp. vanilla

pinch of salt

1- 16oz. pkg confectioners sugar

1T.extra confectioner sugar for dusting

1/3 c. peanut butter

Directions:
Directions:
Combine potatoes, milk, vanilla and salt in bowl.

Stir in sugar until dough consistency is reached.

Refrigerate until chilled (approx. 1 hour)

Sprinkle small amount of confectioners sugar onto a surface or use wax paper.

Roll out potato dough into a rectangle shape.

Spread peanut butter onto potato dough.

Roll up jelly roll style and refrigerate approx. 1 hour or until firm.

Slice into small pin wheels.
