4-5 carrots, grated
4-5 apples, chopped
1 cup purple cabbage

Options:
unsweetened coconut or feta
raisins or dried cranberries
sunflower seeds (toasted) or almonds (toasted)


Dressing:

1/3 c. mayonnaise
1/3 c. yogurt or sour cream (can be left out for a non-dairy option, just use more mayo)
2 Tbsp honey
1 Tbsp white balsamic vinegar (coconut-infused is very nice)
salt and pepper

Directions:
Build salad to your taste. We recommend the coconut/raisin/sunflower seed option. Add dressing, a little at a time, to taste. Play around with the flavour of the dressing, we like a little more vinegar for a bit of bite. This is a very fresh and beautiful fall slaw.
