1 large diced onion
1 tbsp oil
2 tsp ground coriander
2 tsp minced garlic
1 tsp fresh grated ginger
½ tsp black pepper, salt and ground turmeric
1 tsp ground cumin and curry powder
1 green chili pepper
2 cups peeled and cubed potatoes
1 cup peas
1 cup diced carrots
1 large dices tomato
1 cup water

Directions:
Directions:
In a saucepan fry onions in oil until soft and golden. Stir in spices including chili pepper, cook for 2-3 minutes. Add potatoes and stir. Add the remaining ingredients and water. Simmer until vegetables are cooked. Add water if needed to find desired consistency.
Variations: cauliflower, green beans or okra

*I used leftover curry potatoes wrapped in puffed pastry to make samosas. Very tasty!
