4 1/2 cup lukewarm water
3/4 cup olive oil
1/2 cup honey
3 Tbsp. instant yeast
2 Tbsp. lecithin granules
2 Tbsp. (heaping) wheat gluten
1 Tbsp. salt
12-14 cups wheat flour

Directions:
Directions:
Combine first 3 ingredients. Mix well.
Add next four ingredients. Add 5 cups of flour. Mix well. Continue adding 1/2 cup at a time until dough clings to side of the bowl.
Mix in Bosch mixer with dough hook for 10 minutes on lowest setting. Let set 5 minutes, divide into 5 loaves.
