11/2-2 lbs fish ( Walleye, Cod, Pollack)
3/4 c. flour
2 Tsp Kosher Salt
1 Tsp pepper
1 Tsp paprika
2 eggs lightly beaten
2 c. Panko breadcrumbs

Directions:

Pre-heat oven to 425º
grease a baking pan.
Cut the fish into 11/2-2 inch strips
Toast the Panko in a pan on the stove top stirring constantly until browned. Set aside in a separate bowl.
Pat the fillets dry with paper towel.
Add the flour, salt, pepper, and paprika in a bowl and mix until well incorporated. Lightly beat
the eggs in a separate bowl.
Dip the fillets in the flour then egg and finally the Panko. (repeat if necessary)
Place the fillets on the baking sheet. Place in the oven and bake for 10-15 minutes or until golden brown.

The bride loves her fish. And even though we disagree on fish species we can agree this is a good recipe. Normally served with a veggie side or a sweet potato it is a winner.
