Bone-In Chicken Thighs
Salt and Pepper
Fresh Rosemary
Olive Oil
Bricks or heavy cans

Directions:
Directions:
Heat frying pan with olive oil on medium-high. Pat dry chicken and season generously with salt and pepper on both sides. Lay chicken in pan and sprinkle generously with rosemary. Place a heavy skillet on top of chicken and place bricks evenly on top of skillet. Cook for about 8-10 minutes. Remove skillet and bricks. Flip chicken over, sprinkle more rosemary on top, and replace skillet/bricks. Cook for another 8-10 minutes, or until cooked through. Serve with roasted potatoes, and drizzle chicken drippings on top.
There are many variations of this recipe, but this one is so simple and so delicious!
