1 cup flour ½ cup sugar

1 teaspoon baking powder 2 large eggs

½ teaspoon salt 1 cup mashed cooked sweet potatoes

1 teaspoon cinnamon ½ cup milk

½ teaspoon grated nutmeg ½ cup chopped pecans or walnuts

¼ cup (½ stick) unsalted butter, softened ½ cup raisins

Preheat the oven to 400 degrees and butter 24 mini-muffin cups, each 1¾ inches wide by 1 inch deep. Into a large bowl, sift the flour with the baking powder, salt, cinnamon and nutmeg.

In a separate bowl, beat the butter with the sugar until light and fluffy. Beat in the eggs, sweet potatoes and milk. Add the wet ingredients to the dry ingredients and mix just until blended. Stir in the nuts and raisins. Fill the muffin cups two thirds full and bake for about 20 minutes or until a toothpick inserted into the center comes out clean. Turn out onto wire wracks and serve at once.
