10 lbs. small and medium size pickles

½ cup salt
2 qts. water


3 qts. cider vinegar
1 qt. cold water
3 lbs. sugar (6 cups)
⅓ cup mixed pickling spice

2 lbs sugar (4 cups)

Directions:
Directions:
Sort and wash pickles and cut lengthwise strips. The small ones cut into halves and the larger into quarters.

Soak overnight in the brine of salt water.

Drain and cover with the pickling solution.

Simmer pickles in this solution for 45 minutes.

Set aside in a cool place for 2 days.

Drain off vinegar mixture and add the final sugar to it. Bring to boiling point.

Pour mixture over pickles and simmer 10 minutes.

Let stand 2 more days.

Pack and fill jars to overflowing with boiling pickling solution. Seal and store.
