½ cup soft shortening
1 cup sugar
1 egg
1 T. grated orange rind
¼ cup pineapple or orange juice

2½ cups flour
1 tsp. baking soda
½ tsp. salt
½ tsp. cinnamon
½ tsp. nutmeg

1 cup seedless raisins (I also use chopped dates.)
1 cup crushed pineapple - drained
Maraschino cherries - chopped
½ cup chopped nuts
½ cup coconut

Directions:
Directions:
Combine first 4 ingredients and then stir in juice.

Sift together next group of ingredients. Add to juice mixture.

Mix in with hands the remaining ingredients.

Roll out and cut into 6 - 2"x7" strips

Bake on greased cookie sheet at 400º for 10-12 minutes.
 

Frosting for Fruit Bars

confectioners sugar
cherry (I use this for flavoring)

Combine frosting ingredients. (You want this thin.)

Frost bars while warm
