3 - 16 oz. cans Great Northern white beans
4 c. chopped cooked chicken breasts
1 T. olive oil
2 med. onions, chopped
4 cloves garlic, minced
2 - 4 oz. cans chopped mild green chilis
2 t. ground cumin
1½ t. dried oregano
¼ t. cayenne pepper
6 c. chicken stock
3 c. grated Monterey Jack cheese (about 12 oz.)

Directions:
Directions:
Heat oil in large pot; add onions and sauté until translucent. Stir in chilis, garlic, cumin, oregano and cayenne and sauté for 2 minutes. Add undrained beans and the stock and bring to a boil.

Reduce the heat and add the chicken and cheese. Stir until cheese melts. I like to let this simmer on low for a while to let the beans thicken the soup and for the flavors to merge.

Season to taste with salt and pepper.
