4 cups all-purpose flour
1 tsp cream of tartar
1 tsp baking soda
½ tsp salt
1 cup (2 sticks) butter, softened
1 cup powdered sugar
1½ cups granulated sugar
1 cup canola oil
2 eggs
1 tsp vanilla




Makes 8 dozen cookies.

Sift together flour, cream of tartar, baking soda and salt.

Combine butter, powdered sugar and 1 cup granulated sugar in a large bowl. Beat with an electric mixer. Add oil, eggs and vanilla, mixing to combine. Gradually add flour mixture. Chill dough 3 to 4 hours until firm.

Preheat oven to 350ºF.

Shape dough into walnut-size balls** and roll in remaining ½ cup granulated sugar. Place cookies on an ungreased baking sheet. Dip the bottom of a glass in granulated sugar and press onto each ball to flatten.

Bake for 12 minutes or until lightly browned. Remove cookies from pan and let cool on newspaper.
