2 cups flour
1 1/4 cups sugar
1 tsp. baking powder
2 tsp. cinnamon
1 1/2 tsp. ground ginger
1/4 tsp. salt
1/2 cup shortening
1 cup buttermilk or sour milk
2 tbsp. molasses
1 tsp. baking soda
1 egg
1/2 cup chopped nuts

Directions:

Preheat oven to 350º.
In small bowl, combine flour, sugar, baking powder, cinnamon, ginger, and salt. Add shortening and mix at lowest speed until particles are fine. Remove 1/2 cup of crumbs; reserve for topping. Add buttermilk, molasses, baking soda, and egg to remaining crumb mixture. Blend until moistened. Beat at medium speed 2 minutes. Pour into 13x9 inch pan which has been greased on the bottom only. Sprinkle with nuts and reserved crumb mixture. Bake 25 to 30 minutes until cake springs back when touched lightly in center. Serve warm or cold, cut in squares with whipped cream if desired.

Note: can substitute coconut for nuts if desired in topping.
