Ingredients:  
1 bag of Idaho potatoes (generally contains about 10 potatoes)
2 cups of shredded Coby Jack cheese
1 cup of bacon pieces or bits
8 ounces of sour cream
Garlic powder
Onion powder
1/2 stick of butter
Salt and pepper to taste

Items needed
1 large baking sheet
Large serving spoon
Mixing bowl

Garnish Suggestions
Green Onions or Chives
Black beans
Shredded Beef or Chicken

Directions:
Par boil 1 bag of potatoes (potatoes need to still have firmness before slicing)
Slice all potatoes in half
Scoop the white flesh from the potato and place in large mixing bowl
Potato skins should look like small boats
Leave about an 1/2 inch of flesh on the potato skin
Place the potatoes on the baking sheet and add a light sprinkle of Coby Jack cheese and salt and pepper

Mix in the following with scooped out potatoes
1/2 stick of butter
1/2 cup of Sour Cream
Onion powder
Garlic powder
1 cup of Shredded Coby Jack Cheese
2/3 cup of Bacon pieces or bits
Salt and pepper to taste

Mix evenly

Scoop a portion of this mixture into the potato skins
Using a spoon, leave a indention into the mixture
sprinkled more cheese and bacon on top

Place in the oven for 20 minutes at 400 Degree
or until cheese is fully melted and bubbly hot

Add salt and pepper to taste

In a separate mixing bowl place sour cream, seasoning for dipping.
