2 cups vegetable oil, for frying
3/4 cup crushed saltine crackers (about 23) note: I used unseasoned dry bread crumbs instead
2 tbsp. dry potato flakes
2 tbsp. flour
1 tsp. seasoned salt
1/2 tsp. black pepper
1 egg
1 tbsp. water
6 (6- to 8-oz.) skinless, boneless chicken breasts

1.Heat oil in 12-inch skillet over medium heat, about 15 minutes.
2. Put crushed crackers, potato flakes, seasoned salt, pepper, flour in large zip top plastic bag. Seal, shake to mix.
3. Whisk egg with water in shallow bowl. Dip chicken breast in egg mixture, then place in zip lock bag with crumb mixture. Seal. Shake to coat. Note: putting coated chicken in refrigerator for half hour or so helps "set" crumbs onto chicken breast.
4. Add chicken to hot oil. Cook, turning frequently until golden brown and instant read thermometer inserted in thickest part registers 165º, 15 to 20 minutes.

Usually not a fan of frying skinless chicken breasts but this was crispy, tasty, moist on inside.
