1 C Butter or Margarine, softened
1 1/2 C Brown Sugar, packed
2 Eggs
1 tsp. Vanilla
2 C Flour (Sub 1 C. Oats for oatmeal chocolate chip cookies)
1/4 C Cornstarch
3/4 tsp. Salt
1 tsp. Baking Soda
2 C Chocolate chips (sometimes I mix in half smarties or m&m’s)

Directions:

Cream butter and sugar together. Beat in eggs one at a time then add vanilla.
In a separate bowl combine flour, cornstarch, salt and baking soda. Add to first bowl and stir together. Stir in chocolate chips.
Drop by spoonful’s on cookie sheet and press down with the back of your spoon or hand (if making oatmeal version don't press down - these flatten out enough)
(Light colored cookie sheets are your friends, or even parchment paper keeps them soft and chewy!)
Bake at 350 for 10 mins (Less if you like them even softer)
Let cool before removing from cookie sheet

I got this recipe from my Mother-in-Law. Its been my favourite ever since and now know it by heart I use it so much!
