1/2 cup shortening or butter
1 cup white sugar
2 eggs, separated into yolks and whites
1 3/4 cups Presto flour (Aunt Elaine used Gold Medal)
1/2 tsp salt (added by Aunt Elaine)
1/2 tsp baking soda (added by Aunt Elaine)
1 tsp cinnamon
1/2 cup milk
1 tsp vanilla

Directions:
Directions:
Preheat to 350º - moderate oven.

Prepare pan: recipe is silent on pan preparation; convention - lightly grease pan with PAM and dust with flour.

Cream shortening or butter. Add sugar and egg yolks; beat well.

In a small bowl, add cinnamon, flour, baking soda and salt; mix well. Add flour mixture to butter mixture, alternately with milk.

In the meantime in a small bowl, beat egg whites until stiff. Fold into batter. Pour into prepared pan.

Bake ~ 35-40 minutes.

Remove from oven and cool.
