3-4 lb. chicken
2 tsp. chopped rosemary
2 tsp. chopped thyme
2 tsp. chopped oregano
1/2 tesp. salt
1/4 tsp. black pepper
1 T olive oil
1 garlic clove chopped

Directions:
Directions:
Make an herb paste by mixing chopped herbs, salt, pepper,
olive oil and garlic. Rub the paste all over the outside of the
chicken.
Stuff with favorite stuffing if desired.
Set chicken on a rack in a roasting pan, breast side up.
Roast in 375 oven about 1-1.5 hours or till done.
