2 lbs. flank steak, cut against the grain into 1/4 inch strips
1 Tbsp. canola oil
4 cloves garlic, minced
1/2 c. soy sauce
1/2 c. water
2/3 c. brown sugar
1/2 tsp. fresh ginger, minced
2 Tbsp. cornstarch
3 Tbsp. water
3 green onions, sliced into 1 inch pieces
Salt and pepper
Hot cooked rice

Season beef with salt and pepper. Put canola oil into pressure cooker and select browning. When oil begins to sizzle, brown meat in batches- do not crowd.
Transfer meat to a platter.
Add garlic to cooker and saute for 1 minute. Add soy sauce, 1/2 c. water, brown sugar, and ginger. Stir to combine.
Add browned beef and any accumulated juices. Select high pressure. Set timer for 12 minutes.
When beep sounds, turn pressure cooker off and use a quick pressure release. When valve drops down, carefully remove lid.
Combine the cornstarch and 3 Tbsp. water, whisking until smooth. Add cornstarch mixture to the sauce in the pot, stirring constantly. Select simmer and bring to a boil, stirring constantly until sauce thickens. Stir in green onions.
Serve over hot cooked rice.
