1 med Navel Orange
4 t Cornstarch
¼ t Ground Ginger
1 C Chicken Broth
2 T Soy Sauce
2 T Chili Sauce
¼ t Hot Pepper Sauce
1 lb. Boneless Chicken Breast, cut into 1 inch squares
2 cloves Garlic, minced
1 T Canola Oil
2 C Broccoli Flowerettes
1 med Red Pepper, julienned
1 med Sweet Yellow Pepper, julienned
½ C Carrots, shredded
⅛ C Cashews
3 C Hot cooked Rice

Directions:
Directions:
Grate orange peel , reserving 1-½ t. Peel & section orange; set aside. In a small bowl, combine cornstarch & ginger. Stir in the broth, soy sauce, chili sauce, hot pepper sauce, & reserved grated orange peel until blended; set aside.
In a large non-stick skillet, stir fry the chicken & garlic in oil for about 2-3 mins or until lightly browned.A
Add the broccoli, peppers & carrots, stir fry for 5 mins or until veggies are crisp-tender. Stir broth mixture & add to the pan. Bring to a boil, cook & stir for about 2 mins or until thickned. Remove from heat & stir in cashews & reserved orange peel.
