Mom's Veal and Peppers Recipe

1lb veal, cut into bite-sized cubes
1 16-oz jar of your favorite spaghetti sauce or Mom's spaghetti sauce
1 lb mushrooms, rinsed and sliced
1 large carrot, grated (ONLY if you want to sweeten the sauce)
1 - 2 green bell peppers, cut into julienne strips

Directions:

Rinse veal cubes and pat dry with a paper towel (Note: this will allow for even browning).

Spray a large saucepan with PAM to coat bottom. Add veal cubes and brown on all sides (Note: they do not need to be cooked through).

Add spaghetti sauce and mushrooms; add grated carrots, if using; stir to combine.

Bring to a low boil and simmer for ~2 hours or until meat is fork tender.

During last 15 minutes of cooking time, add peppers and continue simmering.

Serve over white rice with a fresh green salad.
