Buckeye Oatmeal Bars Recipe

½ C Butter, softened
½ C White Sugar
½ C Packed Brown Sugar
1 Egg
⅓ C Creamy Peanut Butter
½ tsp. Baking Soda
½ tsp Vanilla
1 C Flour
1 C Quick Cook Oats
¾ C Creamy Peanut Butter
2 C Semi-sweet Chocolate Chips
½ C Heavy Whipping Cream

Directions:

1. Preheat oven to 350º
2. In bowl for stand mixer, cream together the butter and sugars.
3. Add egg, ⅓ C peanut butter and vanilla. Mix well.
4. Stir in flour, baking soda and oats. Mix just until combined.
5. Spread in an 8"x8" pan that has been sprayed with cooking spray.
6. Bake for 23-25 minutes.
7. After bars have cooled, spread ¾ C Creamy peanut butter over top of the oatmeal bars.
8. In a double boiler, heat heavy whipping cream until very hot but not boiling..
9. Add chocolate chips, stir for 1-2 minutes or chocolate is smooth and shiny. Let chocolate sit 3-5 min.
10. Using a rubber spatula, spread the chocolate over the peanut butter in a smooth layer.

Garnish the top with buckeyes while chocolate is still wet so the buckeyes stick on bars. Allow chocolate to set. then cut into 9 bars. Store in an airtight container.
