10 eggs
1/4 cup flour
1 tsp. baking powder
1/2 tsp. salt
16 ounces cottage cheese (low fat)
3/4 lb. grated cheese I use mixture
6 Tbsp melted butter
two 4 oz cans diced green chilies

Optional Items that can be added:
1/4 - 1/2 cup onion finely chopped (I like to use chives instead of onion)
1/4-1/2 cup red pepper finely chopped
1/2 - 3/4 cup diced ham or cooked sausage

Recipe can easily be cut in half for 4-6 people:
6 eggs
1/8 cup flour
1/2 tsp baking powder
1/4 tsp. salt
8 ounces cottage cheese
1/2 lb. grated cheese
3 Tbsp melted butter
1 4 oz. can diced green chilies

Directions:
Directions:
Beat eggs. Add flour, baking powder & salt, using wish to combine. Add melted butter, cheeses, optional ingredients combine. Stir in Chilies

Bake in 9 x 13 pan or (8 x 8 or pie pan for 1/2 recipe) at 350º for 35-40 minutes, until puffy and lightly browned. The 1/2 size cooks for same time.
