CAKE:

Preheat oven to 350º F and grease and lightly flour 3 8" cake pans. Set aside.

Using a mixer, beat the butter on high until creamy. Add granulated and brown sugars and beat on medium-high until creamed. Add eggs and vanilla. Beat on medium until everything is completely combined. Scrape the sides and set aside.

In a large bowl, toss together the flour, baking powder and salt. Slowly add the dry ingredients to the wet ingredients. Beat on low until just combined , then add buttermilk, lemon zest and lemon juice. Remove from the mixer and stir lightly until everything is just combined. Toss the blueberries in 1 Tbsp. flour and fold into the batter. Batter is extremely thick. DO NOT OVERMIX AT ANY POINT! That will lead to a dense, tough crumb.

Spoon batter evenly into the 3 prepared pans. If you only want to use 2 pans, bake times will be longer. Bake for about 21-26 min. or until a toothpick in center comes out clean. Cool completely before frosting.

FROSTING

Beat cream cheese, butter, lemon juice, zest and vanilla together until smooth and fluffy. Add powdered sugar in several additions and beat until creamy with each addition. Add more sugar or juice as needed for easy spreading.
