Ingredients: 1 box white cake mix 1 (3-oz) strawberry-flavored instant Jello 1 (15.5 oz) pkg. frozen strawberries in syrup, thawed and pureed (reserve 1/3 c. strawberry puree for frosting) 4 large eggs 1/2 c. vegetable oil 1/4 c. water
Strawberry Buttercream Frosting
1 c. butter, softened 1 c. shortening 1/3 reserved strawberry puree 1/2 tsp. strawberry extract 1 1/2 tsp. vanilla extract 2 lbs. powdered sugar

Directions:Preheat oven to 350 F. Lightly grease and flour 2 (8-inch) round cake pans.
In a large bowl, combine cake mix and gelatin. Add pureed strawberries, eggs, oil and water. Beat at medium speed w/ an electric mixer until smooth. Pour into prepared pans and bake 30-40 minutes or until a toothpick comes out clean. (Tip: to get flat tops, use bake-even cake strips and roll batter to evenly go up the sides of the pans)
Let cool in pans 10 min. Remove from pans and cool completely on wire racks. (I just cool completely in pans).
Frosting:
Cream the butter and shortening together until smooth, add liquid ingredients and mix well. Slowly add powdered sugar a little at a time and beat at medium speed until smooth. You can adjust the amount of water to get the consistency you want. For a little extra zip, spread a thin layer of good quality strawberry preserves on the bottom layer before adding the frosting. |
