Sausage and Tortellini Soup Recipe

Ingredients:  
1 lb bulk sausage. I used sweet Italian.
1 box dried cheese tortellini
8 cups broth (chicken, vegetable, or beef)
3 cloves garlic, sliced
2 medium carrots, diced
1 stalk celery, diced
1 onion, diced
¼ head of cabbage, diced
3 Tbl. Olive oil
1 can white beans, drained & rinsed
1 can diced tomatoes.
Herbs to taste ( I used fresh tarragon)
2-4 oz. parmesan reggiano rind
Salt & pepper to taste

Bake mini meatballs with the bulk sausage. Use a jelly roll pan, lined with foil and lightly greased. Scoop heaping teaspoon amounts of the sausage onto pan. Bake at 325 degrees for 25 minutes until browning on top. Drain and set aside.

Sweat garlic, carrots, celery, onion, herbs, & cabbage with oil until it begins to brown. Add beans, tomatoes, cheese rind, and broth. Simmer for 20 minutes.

Add sausage balls and tortellini. Simmer until tortellini is tender.

Serve with French bread or biscuits.
