Eye of the Round Roast Beef
Really good Italian olive oil (a cold-pressed Tuscan olive oil is best; Kirkland brand in the glass bottle is quite good)
Rosemary, to taste
Salt and cracked pepper, to taste

Directions:
Directions:
Preheat oven to 325º.

Put the eye of the round in a baking dish and put in oven.
Cook to desired temperature: 145 Degrees Medium Rare or 160 Degrees Medium (I would not go beyond medium).

When desired temperature is reached, place on counter for 5-10 minutes. Slice thinly and put on serving platter. Pour olive oil over the meat. Add rosemary, salt and pepper to taste.

This is the simplest of recipes and, as usual, when complete, have a glass of red wine with it!!!

This was served at the Palmer family Christmas in Arlington Heights in 2018 to the delight of all! Delizioso!
