1 box Near East Tabouli mix
3 bunches fresh parsley, pulled from vine, rinsed and chopped
1 lg cucumber, chopped
3-4 lg tomatoes, chopped
2 lg carrots, minced in a food processor
~1/2 cup olive oil
1 lg lemon, juiced
Pita bread (we use the La Touyfan low carb variety)

Directions:

Prepare Tabouli according to package directions.

Combine parsley, tomatoes, cucumbers and carrots in large mixing bowl. Add prepared Tabouli and combine. Add lemon juice and olive oil. Toss to mix thoroughly.

Serve cold with pita bread.
