Banana Bread Recipe

2 cups whole wheat pastry flour
3/4 tsp baking soda
3/4 tsp salt
1 medium banana, mashed
1/2 cup pure maple syrup
1/2 cup unsweetened apple sauce
1/4 cup original, vanilla soy or plant-based milk (we like Blue Diamond Vanilla Almond)
1 1/2 tsp vanilla extract

Preheat oven to 350º.

Prepare loaf pan: lightly grease and dust with flour.

In large mixing bowl, soft together flour, baking soda and salt. Set aside.

In a separate mixing bowl, combine mashed banana, maple syrup, applesauce, milk, and vanilla. Mix thoroughly.

Make a well in the center of the dry ingredients and pour in the wet ingredients., mix until everything is evenly moistened.

Spoon batter into prepared loaf pans, but don;t spread batter to edges (it will spread as it cooks).

Bake for55-60 minutes. Bread is done when edges of bread are golden brown and pulling away from sides of pan. A toothpick insertion is not a good gauge because the banana will keep better moist.

Let the bread cool for ! 30 minutes, run knife around edges and remove loaf from pan. Cool completely before cutting.
