1 lemon
1 1/2 tsp horseradish or Dijon mustard
2 minced garlic cloves
2, 6-oz skinless, boneless chicken breasts
1 tsp olive oil
1/4 c Fresh parsley
1 green onion, minced
1/2 yellow bell pepper, cut in small strips
1/2 pound fresh snow peas, trimmed
2/3 cut thawed frozen green petit peas
10 fresh grape tomatoes
1/4 tsp black pepper
Salt to taste

Grate zest from lemon

In a small bowl, stir together lemon zest, mustard and garlic.

Place chicken in quart-size Ziploc bag and add mixture. Refrigerate 15 to 20 minutes.

Spray grill pan with non-stick spray. Cook chicken, turning once until chicken is cooked and lemon is well-charred, ~ 8 minutes.

Meanwhile, heat oil in medium, non-stick skillet over medium heat. Add parsley, green onion and yellow peppers and cook for 3 minutes. Add snow peas and frozen green petit peas, cook, stirring often until snow peas are crisp tender; ~ 2 minutes. Add grape tomatoes and cook for one minute more.

Cut lemon into wedges.

Transfer vegetable mixture to plate and top with cooked chicken, sliced into bite-size pieces. Serve with lemon wedges.
