Ingredients: 3 green bell peppers (use red, yellow or orange for a more colorful dish) 1 medium onion, about 1/2 cup chopped 1 Tbsp olive oil 1 clove garlic, finely chopped 1 Tbsp chopped parsley 1 cup tomato sauce (to be mixed with ground beef) 1 cup tomato sauce (to be used in baking pan) 3/4 cup grated Parmesan cheese 3 Tbsp red wine (optional) 2 cups cooked rice (3/4 cup raw rice and 1-1/2 cup water) 1 lb ground beef Garlic salt to taste Salt and pepper to taste

Directions:Preheat oven to 350º.
Prepare square baking pan: spread 1/4 cup sauce on bottom of pan.
Cut the peppers in half the long way, trim the stem ends, and carefully remove seeds and pits.
Simmer pepper in cold water (~ 5 minutes). Remove peppers from water and let cool slightly
Cook the rice according to package directions.
In a large skillet, sauté the onion and garlic until slightly opaque (1-3 minutes). Add ground beef and stir until it is no longer red. Stir in the remaining ingredients (other than the sauce) and let the mixture cool slightly.
Stuff the 6 pepper halves with the meat and rice mixture. Place the stuffed peppers into prepared baking pan; add remaining tomato sauce to the top of each pepper. Bake until the peppers are tender, ~30-40 minutes. |
