1 1/2 lbs stew beef, cut into bite-sized chunks
2 large onions, sliced
1 lg can whole peeled tomatoes
1/2 can water (note: you can also use beef broth for a richer flavor)
Paprika
1 green pepper, cored and sliced julienne
1 Tbsp cornstarch
1/3 cup water

Brown stew meat in large skillet pan. Remove meat.

Brown onions well in pan. Add tomatoes and water (or beef broth). Stir to combine. Put meat back into onion and tomato sauce. Add enough water (or beef broth) to surround meat. Sprinkle liberally with paprika. Note: the paprika gives this dish its smoky and spiced flavor, use it liberally.

Bring to a boil and simmer for 2 hours.

10 minutes before serving, add julienne peppers to cook.

Combine cornstarch and water.

5 minutes before serving, thicken gravy with cornstarch to desired consistency.

Serve with broad noodles and rye bread and butter.

This flavorful beef dish is a childhood comfort food. Every time this was cooked in the Andrews' household, Morgan would announce she didn't like it, until she tasted it, at which point, she decried how delicious it was!
